Hypertext properties, page settings, background 
With "Hypertext >Current hypertext properties", second tab, you can define some other ebook/hypertext properties.

Hypertext/ebook properties Create a new ebook from an existing work (.doc, .rtf, .wri ...) Here you can define the cover of the current ebook Here you can define what is the summary page in the ebook If you check this, the background image for a table cell will be tiled Default background colors/images for new pages Here you can define a global header / footer for the ebook. EBook window display settings / reader window options Ebook passwords, protect the ebook Shopping cart With this button, you apply this image/color bg  
 
For Headers and Footers, you can manage the thing also at page level. 
Cover and Summary are used both for Aeh Exe and Opf Mobi Epub ebooks. For Opf Mobi Epub ebooks you can specify additional significative pages within the Export dialog.
